Monday: had dinner on the go, as we were out of town for the evening
Tuesday: Pumpkin spice pancakes & eggs; make heart healthy pancakes w/ about a tbls of pumpkin spice
Wednesday: Chicken breast w/ mixed veggies for side; I just sliced the chicken breast into pieces, sauteed w/ a couple tbls of extra virgin olive oil, and a couple tbls of balsamic vinaigrette, and a touch of seasoning.. A quick concoction, but no one seemed to mind
Thursday: fresh pesto over whole wheat pasta w/ diced chicken breast (using leftover chicken breasts from night before); pesto recipe here
Friday: leftover night
Saturday: family dinner out
Sunday: Crockpot lasagna
