Ah, the weekend.. they’re nice while they last, right? =)
Let’s see, Saturday Erik headed up north for a fantasy football draft and it was just K & I.. We got lots accomplished on the “to do” list though! I finished up painting in her new room, put together this 9 cube storage unit (I bought 3 of each fabric cube in light tan, pale pink, and dark pink.. they coordinate w/ her new bedding perfectly!) I also picked up a metal little table from Hobby Lobby (love their 30% off sales!).. It was black, but thanks to a good ole’ can of spray paint, it’s now white! (don’t worry, I used a cloth over my face the whole time outdoors so no fumes).. I also found a lamp that was on sale for $26.65 marked down from $75! I need to figure out a way to cover the shade w/ fabric though.. it’s red and I’m wanting white..
Today we had a busy morning w/ church and another session of daycare duty.. Guess what? The sweet little girl w/ the major allergies was back! Erik assured the mom that we are very careful w/ her and encouraged her to contact the office to make sure the soy allergy is added to her info.. All together we had 8 youngsters today.. around the ages of 22 months =) Then it was home for FOOOOOOTBALL! (as Erik has been exclaiming).. It’s quite funny to see how absolutely giddy he has been the last couple of days counting down.. So that’s what his day consisted of.. Kaylor went to a circus themed birthday party for a couple of hours, and I did odds & ends..
A recipe share.. I’ve been making this one for 3 1/2 years, and always a family pleaser.. Needless to say, it’s always handy in my recipe stack. I also alter it occasionally using different morsels.. Tonight I used peanut butter-chocolate chips.
Chocolate Chip Cookies
1 c. sugar
1/2 c. brown sugar, packed
1/2 c. margarine, softened
2 tsp. vanilla
2 egg whites
2 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 c. chocolate chips, semisweet
Heat oven to 375 degrees. Mix sugars, margarine, vanilla & egg whites in a large bowl. Stir in flour, baking soda, and salt. Stir in chocolate chips. Drop dough by rounded teaspoonfuls (I use the medium scoop by Pampered Chef) about 2 inches apart onto cookie sheet. Bake 8-10 mins. or until golden brown. Cool on wire rack. Makes about 28 cookies.
