Easy Enchiladas

Directions

  1. Brown meat and onions in large skillet.
  2. Add 1 cup enchilada sauce and 1 cup cheese & mix well
  3. Put filling along center of each tortilla.
  4. Roll up and place seam side down in a 9×13 pan.
  5. Pour remaining sauce over, then sprinkle remaining cheese over.
  6. Bake at 350F degrees for about 30 minutes till cheese is bubbly.

Pesto Cavatappi

We don’t often go to Noodles & Co. but when I have, I absolutely love their pesto cavatappi.  I’ve made homemade pesto at home and it’s fairly simple to make, so I thought we would have a homemade version of this yummy dish.  Here is the recipe I based mine off of, and I tweaked mine a bit to use what I had on hand.

 

Pesto Cavatappi
Ingredients:
Cavatappi Pasta- 1-2 cups uncooked (I use organic whole wheat pasta)
Heavy whipping Cream – 1 1/2 tbsp
Olive Oil – 1 tbsp
Parmesan Cheese – 1-2 tbsp Shredded
Pesto (used premade packet, just added water & oil)
Garlic – 2-3 cloves, minced
Sliced mushrooms
white wine (I only had Sherry cooking wine, and that worked too)

Cook pasta, while that’s going make pesto sauce.  Saute mushrooms in wine in a small skillet.  Once all three are separately done, mix all together w/ the pasta.  Add the whipping cream, and reduce heat to low for 1-2 minutes.  Top w/ grated parmesan cheese.  Enjoy!

Homemade Gingerbread Play Dough…

We made this on Christmas Eve, and Ashlyn couldn’t have been more excited.. As if playing w/ play dough wasn’t enough fun in itself, the smell was scrumptious!

Here is the recipe that we used;

Gingerbread Play Dough
1 c flour
1/2 c salt
2 tsp cream of tartar
about 1/2 c of spices (we used pumpkin spice, cinnamon, & nutmeg)
1 c water
1 tsp oil

In a sauce pan, mix all of the dry ingredients, then add water & oil.  Cook on low to medium for several minutes, stirring constantly.  It will start to thicken, and darken in color.  It is done once it starts to take on a dough like consistency, and pull from the sides of the pan.

Minestrone Casserole

My family LOVED this recipe!  Everyone went back for seconds, and even thirds (Kaylor! lol)… Will definitely be filing this recipe as a “to make again”..

Ingredients

  • 1 lb. box elbow macaroni noodles (I use whole wheat pasta)
  • 1 Tbsp olive oil
  • 3 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 2 garlic cloves, crushed
  • 1 15 ounce can diced tomatoes, undrained
  • 1 15 ounce can dark red kidney beans, drained
  • 1 10 oz box frozen spinach leaves (I opted to leave this out)
  • 1/4 cup Parmesan cheese
  • 1-2 cups shredded Mozzarella cheese
  • Parsley, sprinkle on top
  • Salt and pepper to taste

Directions

  • Cook the pasta as directed in a saucepan.  Drain. Do not rinse.
  • In the same saucepan, add the olive oil and saute the carrots, celery and garlic for 3 to 4 minutes.  Add the undrained diced tomatoes, drained kidney beans, and cooked spinach leaves.  Add the pasta back into the saucepan and toss with the other ingredients.
  • Pour them into a lightly greased 9×13-inch baking dish.  Sprinkle the Parmesan cheese over top, then sprinkle the mozzarella cheese over top. Bake at 350 for 20 to 25 minutes, or until cheese has melted and begins to golden on top. Season with salt and pepper to taste.

Mini Lasagna Cups..

Here’s what we had for dinner tonight… Erik was at a golf outing, but the girls and I loved it!  Yum-O!  Even w/ leftovers for lunch tomorrow, still had some to freeze for a quick meal at a later date (gotta love that!)..

Mini Lasagna Cups

1 lb lean ground beef  (I used 1lb of lean ground turkey)
1 lb sausage  (I left this out this time)
1 cup spaghetti sauce
1 1/2 cups part skim ricotta cheese
1/4 teaspoon kosher salt
1/4 teaspoon pepper
24 wonton wrappers
1 1/2 cups shredded cheese
Preheat oven to 375 degrees. Brown sausage and hamburger in a large skillet over medium high heat and drain. Divide into 4 portions and reserve three for another night. Add spaghetti sauce to remaining meat mixture and stir to combine.
In a large bowl, combine the ricotta the salt and pepper and stir to combine.
Coat a 12 cup muffin tin with cooking spray, and arrange a wonton wrapper in each cup. Take half the ricotta mixture and divide it among the 12 cups. Top with half of the meat sauce, and sprinkle with shredded cheese. Place another wonton wrapper over the cheese, and repeat the layers by adding the remaining ricotta cheese, meat sauce, and top with shredded cheese.
Bake at 375 degrees for 10 to 15 minutes until the cheese is melted and the wonton wrappers are golden. Cool in the muffin tin for 5-10 minutes before serving.
