Easy Enchiladas

Directions

  1. Brown meat and onions in large skillet.
  2. Add 1 cup enchilada sauce and 1 cup cheese & mix well
  3. Put filling along center of each tortilla.
  4. Roll up and place seam side down in a 9×13 pan.
  5. Pour remaining sauce over, then sprinkle remaining cheese over.
  6. Bake at 350F degrees for about 30 minutes till cheese is bubbly.

Caprese Bites -Appetizer

These looked easy enough to make, so I made some up for the Pampered Chef party I had earlier this week… I’m still not sold if *I* personally like these or not, but a couple of the guests said they were good.. Although, I suppose they could have just been sparing my feelings if they didn’t really enjoy them;)

Ten on Tuesday 4/5…

1.  Do you meal plan?  I absolutely love it!  Anytime I have gotten off track w/ meal planning, things quickly went haywire.  We were scurrying for dinner at the last minute, didn’t have certain staples on hand, etc.  If you can’t tell by now, I love organization.. It makes my heart sing.. lol   Anyhow, I’ve been keeping my eyes peeled for a program that I can easily reference, and keep meals/ingredients organized.  I came across this website.  I’ve been using the 4th template down, and it’s exactly what I’d been looking for.

2.  If you follow your favorite blogs via a feed reader RSS, you can use the “Next” button to really simply your blog reading!  Detailed directions can be found here.

3.  Not sure what a feed reader is?  Check this out! It will save you tons of time from having to visit every blog you follow individually to know if there is a new post!

4.  The sound of pitter patter feet down our long, hardwood hallway will never get old..

5.  We took Kaylor bowling w/ us Saturday night for hubby’s business quarterly “social” out.. Little stinker had higher scores than me the entire time! lol  She of course, thought it was hysterical..

6.  Hallelujah for lazy Sundays.. We have been working on so many house projects, and not to mention I’m going on week 12 w/ sweet baby boy and his wicked, eat every 2 hours even through the night schedule.. My dear hub let me nap not once, but twice on Sunday!

7.  During the non-winter months we LOVE grilling..  One of our absolute favorites is pork burgers.. We buy them locally from this farm. Lean, local, and delicious!

8.  This is what I like to see… the first signs of spring.  Come on warmer weather!

9.  We’re currently studying the book of Exodus in our small group..  I LOVE diving into the living word!  It’s absolutely rejuvenating, and refreshing.

10.  One necessity that drives me batty when we’re out?  Q-tips!  Random?  Yes, that’s how I roll:P

Pot Pie…

Need a super easy & yummy dinner?  This is one of my family’s favorites..  After a couple days of meals & lunches w/ leftover turkey & ham, I wanted to do something else w/ it other than sandwiches, or just heated up.  This worked great!

Pot Pie
-1 cup reduced fat Bisquick
-1/2 cup skim milk
-1 egg
-2 cups frozen mixed veggies (thawed)
-2 cups cooked meat (I used turkey here, but often times use chicken)
-2 cans fat-free cream of chicken soup (I use low sodium, and 1 can cream of chicken and 1 can cream of potato)

Preheat oven to 400 degrees.  Spray casserole dish w/ non-stick cooking spray.  Mix together veggies, chicken & soup. Pour into casserole dish.  In another bowl, mix Bisquick, milk & egg (I also add a tablespoon or so of thyme and chicken seasoning for a little bit of flavor).  Pour over the chicken mixture, and bake for 30 minutes or until crust is golden.  Enjoy & expect your family to have seconds!:)

This recipe is soooo yum-o-licious!  Not too difficult either..

Pumpkin Apple Butter

Prep: 10 mins  Cooking: 90 mins  Cooling: 0 min
Yields: 48 servings (1 tablespoon per serving)

Ingredients

  • 1 can (15 ounces) LIBBY’S® 100% Pure Pumpkin
  • 1 medium apple, peeled and grated
  • 1 cup Apple All Natural 100% Juice
  • 1/2 cup firmly packed brown sugar
  • 3/4 teaspoon pumpkin pie spice

COMBINE pumpkin, apple, Juicy Juice, sugar and pumpkin pie spice in medium, heavy-dutysaucepan. Bring to a boil; reduce heat to low. Cook, stirring occasionally, for 1 1/2 hours. Serve with buttermilk biscuits, breads, corn muffins or hot cereal. Store in airtight container in refrigerator for up to 2 months.  Recipe makes 3 cups.
