day after thanksgiving…

The day after Thanksgiving is definitely one my most favorite days of the year..  I skipped out on going out to shop this year (although I did get almost ALL of my holiday shopping down online..whoot!), but in tradition we always decorate our house w/ Christmas decor, put up the tree, listen to holiday music, and bake some goodies.  We did all of those things aside from baking, but we made up for that part w/ leftover pumpkin pie from Thanksgiving.  I love the memories that we create on this day, and as a mom they will be ones I always remember.  This year was even more special, watching Ashlyn help Kaylor decorate the tree.  Last year she was still too young to help..  I was snapping some images of them, and was just about to go grab the video camera when I remembered that I had HD video on my 5dMarkII.. duh!  I haven’t used it enough yet to know really what I’m doing, so bear w/ the unsteadiness.. lol   This was also a first attempt at putting together the video/slideshow.. I love how it turned out:)

Pot Pie…

Need a super easy & yummy dinner?  This is one of my family’s favorites..  After a couple days of meals & lunches w/ leftover turkey & ham, I wanted to do something else w/ it other than sandwiches, or just heated up.  This worked great!

Pot Pie
-1 cup reduced fat Bisquick
-1/2 cup skim milk
-1 egg
-2 cups frozen mixed veggies (thawed)
-2 cups cooked meat (I used turkey here, but often times use chicken)
-2 cans fat-free cream of chicken soup (I use low sodium, and 1 can cream of chicken and 1 can cream of potato)

Preheat oven to 400 degrees.  Spray casserole dish w/ non-stick cooking spray.  Mix together veggies, chicken & soup. Pour into casserole dish.  In another bowl, mix Bisquick, milk & egg (I also add a tablespoon or so of thyme and chicken seasoning for a little bit of flavor).  Pour over the chicken mixture, and bake for 30 minutes or until crust is golden.  Enjoy & expect your family to have seconds!:)

Ten on Tuesday

1.  I do a lot of bulk buying when meat is on sale.. When 96/4 lean ground beef is on sale, it’s definitely worth while to stock up, when it’s $4.99/lb otherwise (eek!)  Here is a great way to freeze for individual meal servings..

2.  Kaylor taught Ashlyn “Ring around the rosie” last week.. It’s too cute, when they “all fall downnnnnn!”..

3.  Has anyone noticed the price of ice-cream & frozen yogurt has gone up?  I saw $6-$8 per container last week.. Eek!

4.  Speaking of the above, I may or may not have had vanilla ice-cream last week, and it may or may not have been in the middle of the afternoon.. doh!

5.  I think big sister taught Ashlyn the following.. She says it quite often, “Awesome! WhooHooo!”…

6.  Tums are my bff right now… ooohhhhh heartburn/acid in my throat, be gone!:)

7.  I’ve found that apples kept in the fridge a) last longer and b) taste better.. Well, maybe not b) so much, but really I’ve found the coolness adds to the crisp, refreshing taste.. (sounds like an apple commercial.. Strange, but sure beats the heck out of Halloween candy.. ha!)

8.  I downloaded this free app.. It searches locally as well as online to see if the item is priced lower.. Very neat!

10.  I’ve been soooo tempted to start playing Christmas music around the house… Next week, for sure!  Have YOU started yet?…
